Easy Weeknight Tacos

Who's a fan of tacos?!


Tacos are a staple in our household. We make them 3 to 4 times a month because not only are they delicious, but they are super easy to throw together. Even better, you can create a pretty healthy, well rounded little meal when you add in the right foods.


A couple weeks ago I was lucky enough to win a giveaway from Lightlife Vegetarian Foods via Twitter. My prize? A coupon for one free product. I was thrilled! Not only is it free food, but it is free food that I can feel good about eating. Win and win :) 


This past Sunday I made my way to Sunflower Market to do my weekly grocery shop with my sweet little coupon in hand. I made my way over to the Lightlife products and spent roughly 20 minutes, I kid you not, trying to choose which product I wanted to try. I realize 20 minutes is ridiculous but what can I say? I love food and it is hard to choose! After much thought, I went for the Smart Ground Mexican Style veggie crumbles. I knew these would be perfect for tacos!






First and foremost, the most amazing thing about Lightlife's veggie crumbles is how easy they make dinner prep! It took me no more than 10 minutes to get dinner ready and plated and for a busy girl like me, this was wonderful. The last thing I want to do at the end of a long day is cook for hours. I love to cook, don't get me wrong, but sometimes easy is best! I was also incredibly pleased with the ingredient list as it was pretty short and each item was recognizable. It is made of real food, which is a top priority in my book. The flavor was spot on with hints of garlic, paprika, and onion. I would absolutely recommend this product not only for its deliciousness but for its easiness too! Thanks Lightlife, you made my life yummy and simple tonight. 



 




For my taco I added the following items to a whole wheat pita...


  • Lightlife's Smart Ground Mexican Style veggie crumbles
  • organic red pepper
  • spicy pico de gallo 
  • 2% shredded mexian style cheese
Ever tried a taco in a whole wheat pita? Um, delicious. The fluffiness of it was the perfect compliment to the firm peppers. Also, it did a stand up job of keeping that pico in place. As  I mentioned earlier, tacos can be an easy way of creating a well rounded meal. I got my veggies with my pepper and pico, my whole grains and fiber with my pita, and some protein with the veggie crumbles (10g per 1/3 cup serving, by the way!). Next time, I think I'll add a few slices of avocado for some healthy fats. All and all, a very yummy, quick, and satisfying dinner.
